Chole Bhature

Chole bhature (Hindi: छोले भटूरे) is a combination of chole (spicy chick peas) and fried breads called bhatoora (made of maida flour).It is mainly eaten in North India and along with chole seems to be have originated in Punjab.It is a street food sold by vendor, and is commonly eaten for breakfast. Chole bhature are very popular in major urban cities.It is a heavy breakfast which is generally accompanied with lassi. There are different varieties of bhature available in the market such as aloo bhatura (bhatura filled with boiled potato), paneer bhatura (bhatura filled with cottage cheese) etc. Chole bhature are served with onions,lime and achar.It is also called Chola poori since the bhatoora resembles a poori.

Ingredients
Serving Size:4

2 cup all purpose flour
1/2cup rava slightly roasted
1tsp baking soda
1/2tsp baking powder
1cup hot milk as needed to make the dough
1 cup fresh yogurt
1tsp salt

Preparation Methods:

Mix the ingredients together and knead till a smooth dough is formed. Cover with cling film and keep in a warm, dark place for 5-6 hours at least.After 5-6 hours, the dough will have risen and become fluffy. Remove the cling film and punch the dough to remove extra air from it. Knead again till the dough is smooth and elastic. Divide the dough into several equal-sized balls.Lightly flour a clean, dry rolling surface and place one ball on it. Roll out into a circular shape.Once the oil has reached the correct temperature, add a rolled-out Bhatura to it gently, to avoid splashing hot oil. In 5-7 seconds, turn gently with a slotted spoon. Wait another 5-7 seconds and press gently in the center of the Bhatura with the slotted spoon.Keep frying and turning gently till both sides are golden.
Chole (Channa Masala)

For the Masala Paste
:
1 tomato chopped
3 garlic cloves crushed
a small ginger root
5 shallots
1tsp chillie powder
1tbsp channa masala powder
1/4tsp turmeric powder
1/4tsp garam masala
2tbsp tamarind juice
1tbsp coconut powder
3 dried chillies
some chopped mint and coriander leaves
salt

Pulsed all the ingredient into a fine paste and keep aside

2 cups boiled channa
1 red onion chopped
1 tomato
1tsp chillies flakes
1/2tsp mustard seeds
1/2tsp cumin seeds
Whole spice like cardamon,cloves,cinnamon and bay leaf
chopped coriander leaves
salt and pepper to taste

Preparation Methods:
First finely chopped the tomato and then add the chillie flakes and a little salt and mash them finely using the back of the knife. Heat a skillet on medium flame and splutter all seasoning ingredients and the whole spices followed by the chopped onions and minced tomatoes. Saute them till the onions turned brown and add the pulsed paste. Take half the boiled channa and make a paste and add to the skillet-saute till the raw smell are removed fro the paste. Finally add the remaining boiled channa and mix well. Adjust the taste of salt and spice..if needed add. Remove from flame and transfer to a serving bowl garinshed with chopped coriander leaves.
