Tempting Breakfast With a Twist

Ingredients
Serving Size: 5

For Egg Rava Dosai:
2 cups semolina
1/2 cup rice flour
1/2 cup buttermilk
1/4 tsp hing powder
salt to taste
1 inch ginger
4 green chillies
10 curry leaves
2 tbsp peppercorns
1 tsp cumin seeds
eggs

Preparation Methods:

Blend rava, rice flour and buttermilk to make a thin batter, add hing powder and salt Let the batter stand for at least 6 hours. Wash and finely chop the ginger, green chillies and curry leaves.
Crush the peppercorns and cumin seeds. Heat the ghee and roast peppercorn and cumin seeds in it and add to the batter. Mix the chopped greens, into the batter. Stir well.

Grease a non-stick tawa, smear little oil. Pour a ladle full of the batter and spread by swirling the tava. Pour a tablespoon oil around and on the dosai. Break the egg onto the dosai. Cook till it is crisp and golden in color. Remove and serve hot with different type curries with tomatoes:

Spicy Pearl Onion Chutney

Ingredients
Serving Size: 4

1 cup peeled and chopped pearl onions
4 dried chillies
a few sprig curry leaves
1/4 cup tamarind juice
salt to taste

For Tampering:
1tbsp channa daal
1tbsp ural daal
2 dried chillies broken
1/2tsp mustard seeds
1/2tsp cumin seeds
a pinch hing powder
few curry leaves

Preparation Method:
Add 2tsp oil in a wok on medium heat. Once heat add all ingredients and saute till the onions are soft and chillies becomes crisp. Allow the mixture to be cooled and grind to a paste by adding enough warm water. In the same wok add another tsp oil and add all the tampering ingredients to splutter and pour over the grinded past

Ingredients

For Simple Tomato Curry
5 tomato
1/4 cup chopped shallots
1/2tsp turmeric powder
1/2tsp chilly powder
salt to taste
1/2 cup water
1/4tsp cumin seeds
1/4tsp mustard seeds
sprig of curry leaves
1/2 cup grated coconut

Preparation Methods:
Place tomatoes in a vessel along with turmeric powder, chilly powder, salt and water. Boil it on a low flame until the tomatoes get mashed well.Grind together coconut and small onions along with 1/2 cup of water.Add the grind paste to the tomato mixture and let it boil for 2 minutes. Splutter cumin,mustard and curry leaves and pour over the tomato curry.
