Upside Down Pineapple Cake and Muffins
Hmmm Pineapples..hmmm my favorite fruit and I just love them. Malays used to have these fruits in their cooking like Sambal Prawn with Pineapple and famous desert Pineapple Tarts.I would post some the recipes using pineapple soon. Today I would like to share the recipe of Up-side Down Pineapple cake and muffins with all. I'm using strawberries as garnish as I don't have maraschino cherries at home.

Pineapple (Ananas comosus) is the common name for an edible tropical plant and also its fruit. It is native to the southern part of Brazil, and Paraguay. Pineapple is eaten fresh or canned and is available as a juice or in juice combination. It is used in desserts, salads, as a complement to meat dishes and in fruit cocktail. While sweet, it is known for its high acid content . Pineapples are the only bromeliad fruit in widespread cultivation. It is one of the most commercially important plants.these fruits varying names in Indian languages: "Anaasa" (అనాస) in telugu, annachi pazham (Tamil), anarosh (Bengali), and in Malayalam, kaitha chakka. In Malay, pineapples are known as "nanas" or "nenas".Pineapple contains a proteolytic enzyme bromelain, which breaks down protein. Pineapple juice can thus be used as a marinade and tenderizer for meat. The enzymes in raw pineapples can interfere with the preparation of some foods, such as jelly or other gelatin-based desserts. The bromelain breaks down in cooking or the canning process, thus canned pineapple can generally be used with gelatin.

Ingredients
Serving Size: 10


1 yellow cake mix (see recipe below)
1/4 cup butter
1/2 cup brown sugar
1 can pineapple slices drained and liquid reserved
1 cup chopped pineapples
few strawberries

For the Yellow Cake Mix:
3/4 cup butter softened
2 cups sugar
2 eggs
2tsp vanilla essence
3 cups cake flour
2.5tsp baking powder
1/2tsp salt
1 1/3 cup milk

Yellow Cake Preparation Method:

Preheat the oven to 350°C degrees.Beat the butter,sugar,eggs and vanilla essence together in a large bowl. Sift the flour,baking powder together in a separate bowl. Alternately add the flour mixture and milk to the butter mixture:beat until smooth after each additions.Blen inthr chopped pineapples and mix well. Melt butter in a cake pan. Stir in brown sugar and 2tbsp of the reserved pineapple liquid . Arrange the pineapples slices in the brown sugar mixture. Pour the prepared yellow cake mix evenly on to up half the pan. If you like sprinkle more brown sugar evenly onto of the batter. Bake for 45 minutes. Cool on the wire rack for 10 minutes. Loosen the edges turn upside down onto the serving plate and put one strawberry in hole of each pineapple slice.

Line 24 muffin pans with paper liners. Preheat oven to 350° C degrees. Pour the remaining batter into the prepared pans -few slices of chopped pineapple pieces on each. Bake for 25 minutes.
