I cannot really believe that kids grow very fast. My daughter is 3 year old today. When I first came to USA she just celebrated her first birthday in Pollachi with her grandparents - now she's entering her 3rd stepping stone. We are planning to celebrate her birthday on 27 August as today is working day. for a chance this time I'm planning not to cook anything at home as my health is not in good shape and there's isn't much help as I used to have before so we all have decided to have a small celebration without cutting cake with her favorite recipes like vadai,murukku,fried rice and stir fried chicken for lunch.

For the sweet item I have decide to make Semiya Payasma. It's being a very long time since I have prepared payasam at home. I have done all the things she have asked me as I want her to be happy always. I had a very difficult delivery when she was born and have to take care of my son as well as my health as my MIL left to India when I was 4 months. Since my son was with my hubby's parents since birth he wasn't really that close with me or my parents..it was a nightmare for me.When she was born I have to look after her myself with the help of a maid in my parents home in Singapore so she's kind of very close with me rather then my hubby or her brother.

Now she has grown up and she's 3 today and I'm feeling very delighted to share some of her favorite recipes with u guys. Since she getting older her theme has changed from Dora to Cinderella Princess -girls can be something these days!!! Her another hot item recently Baskin-Robbins Ice-Cream Cake..oh boy I really cannot keep up with a changes these days-give me headache :(

Her Menu Card For the Day:
1. Onion Vadai
2. Spicy Murukku
3. Sweet Murukku
4. Semiya Payasam.
5. Tofu Fried Rice
6. Stir-Fried Soy Chicken

Well my daughter was very happy to have all her favorite dishes in one day-that was a really feast for her little tummy. She got her gifts and even went for a surprise dinner at Pizza Hut too. She went to bed feeling very happy and her tummy full with all her feast. Her smile really made us feel very happy.

1.Onion Vadai

Ingredients

1 cup urad dal
1 cup of finely chopped onions
2 green chillis finely minced
few curry leave chopped finely
1/2 cup finely chopped coriander leaves
Coriander leaves - 3 to 4 sprigs
a pinch hing powder
Salt and pepper to taste
Peanut oil for deep frying

Preparation Methods:
Soak Urad dhal for 2 hours in water and rinse it really well. Then grind the soaked dhal into a smooth batter trying not to add too much water or it will drinking too much oil while deep frying so be careful while grinding the batter.Add finely chopped onion, green chilies, curry leaves, coriander leaves, hing powder and enough pepper salt to the gridded ural dhal batter.Mix the all and let it sit for 20 minutes.Wet your palm with little water or use a plastic sheet. Take a small amount of batter in your left palm, flatten it lightly, shape them into round and make a hole in the center.Drop it carefully into hot oil, turning once in a while, deep fry till golden brown. Serve with sambar or any type of chutneys.

2. Spicy Murukku

Ingredients

5 cups rice flour
2.5 cup besan flour
1tsp black sesame seeds
1/2tsp oma seeds
2tbsp chillie powder
1tsp hing powder
1 cup hot oil
warm water
oil for deep frying

Preparation Methods:
In large bowl mix all ingredient expect water oil. Knead the mixture into a soft dough by add the hot oil and enough of warm water.Then place a good amount of the dough into the murukku maker and press out the shape onto wax paper. By using wax paper, murukku will easily come off when u fry them in hot oil.Heat up the oil in a large wok on medium flame...deep fry each murukku til golden brown. Drain and serve hot.

3. Sweet Murukku

Ingredients

2 cups rice flour
1 cup urad dal flour
1 cup jaggery
5 cardamoms
5 peppercorns
groundnut oil for frying.

Preparation Methods:
Coarsely powder both the cardamoms and the peppercorns.Combine both the flour and add enough water to form a stiff dough.Put in a murukku mould and press.Deep fry in oil. Make all the murukkus thus. Boil jaggery with a little water and make a thick syrup. Add the coarsely powdered spices. Break all the murukkus in 2.5 cm pieces and mix with the jaggery syrup.

4.Semiya Payasam

Ingredients

1 cup vermicelli
1 cup milk
1 cup sugar (accordingly to taste)
a handful of cashew nuts
a handful of raisins
1 pinch saffron
2-3 pods cardamom
¾ cup water

Preparation Method:
Heat the ghee and fry the vermicelli till light and boil the water in a small saucepan. Add the vermicelli to the boiling water and cover it. Keep stirring occasionally. Once the vermicelli becomes soft , add the sugar and continue to stir.Add the saffron in the milk and dissolve it, add the mixture to the vermicelli. Powder the cardamom and add it to the mixture.Then fry the cashew nuts and almonds in ghee and add these Mix well and boil for about two minutes. delicious lip smacking Semiya Payasma ready. Either serve them hot or cold.

5.Tofu Fried Rice

Ingredients

1 cups of cooked Basmati Rice
1 cup of cubed tofu marnited with little salt,chillie and pepper powder
1 cup of finely chopped onions
2 green chillies chopped
1/4 cup of green peas
1/4 cup of chopped green beans
1/4 cup of cubed carrots
3 eggs beaten well
1tbsp of finely minced garlic
1tsp of crushed chillie flask
1tsp of chillie powder
1tbsp pepper powder
Salt to taste
1tsp of lemon juice
2tbsp sesame oil
1tbsp soy sauce

Preparation Method:
Add 2tbsp of oil ,1tsp of salt and 1tsp of pepper powder to the cooked rice Mix well and keep a side.Coat a frying pan with 1tsp oil,pour in the beaten eggs. Add salt and pepper.Scramble it well in the oil and keep aside.Coat a large wok with 2tbsp of oil, add the minced garlic and the chillie flask followed by chopped onion and all the chopped vegetables. Meanwhile add couple tsp oil and shallow fry the chopped tofu till tender-keep aside..Fry the mixture for 10 minutes. Now add the scramble eggs, shallow fried tofu lemon juice,and soy sauce -mix well. Lower the flame and add the cooked rice mixing well in the mixture.

6. Stir-Fried Soy Chicken

Ingredients

1 cup cube chicken breast
1 cup chopped onions
1/4 chopped celery
1tbsp minced garlic
1tbsp shredded fresh ginger
1tbsp chillie flask
1tbsp grounded black pepper
1tbsp soy sauce
1tsp dark soy sauce
2tbsp sesame oil
salt to taste
1/4 chopped spring onions

Preparation Methods:
Heat a skillet with sesame oil-once heated add the chillie flask,garlic and ginger followed by the chopped onions and celery. Saute them till the onions turned slightly brown. Then add the cubed chicken and a little salt. Cook till they become tender and then add all the sauces and pepper powder.Saute them and then add the chopped spring onions. Adjust the level of salt and transfer to a serving platter.
