A Sambal can be a condiment, an ingredient or a dish which will always contain a large amount of chilis. The word is of Indonesian and Malaysian origin. Sambals are popular in Indonesia, Malaysia, Singapore, the southern Philippines and Sri Lanka, as well as in the Netherlands and in Suriname through Indonesian influence. It is typically made from a variety of peppers, although chili peppers are the most common. Sambal is used as a condiment and as an ingredient for a variety of dishes. It is sometimes a substitute for fresh chilis. It can be extremely spicy for the uninitiated. Some ready-made sambals are available at exotic food markets or gourmet departments in supermarkets in many countries. A sambal can also be a pungent dish of its own in which a large amount of chili peppers is used.A Malay style sambal. Fresh chilis are pounded together with toasted shrimp paste (belacan) in a stone mortar to which sugar and lime juice are added. Tomatoes are optional ingredients.

Ingredients
Serving Size: 4

1 packet firm tofu chopped into cube
1/2 cup vegetable oil
1/2tsp turmeric powder
1tsp red chillie powder
1/4tsp garam masala powder
1tsp salt
5tbsp home-made sambal belacan (refer for the ingredients)
1/2 cup chopped onions
1/4 cup chopped tomatoes
few sprig curry leaves
1/2tsp mustard seeds
1/2tsp cumin seeds
chopped coriander leaves
salt to taste

Home-made Sambal Belacan
Preparation Methods:
In a large bowl add turmeric powder, chillie powder,garam masala and salt. Mix them well with little lime juice. Then add the cubed tofu and coat them in the spice mixture. Leave aside for 3 hour. Would be even better if it's marinated and keep in fridge overnight. Heat a heavy bottom skillet with vegetable oil. Once heated shallow fry the marinated tofu in batches. Drain and keep aside. Pour the remaining oil away leaving about 2tbsp oil in the pan. Splutter mustard,cumin and curry leaves followed by the chopped onions and tomatoes.Once the onions and tomato mixture become tender add the shallow fried tofu cubes and sambal belacan .Saute them well until the oil starts to separates.Adjust the level of salt and transfer o serving bowl garnished with chopped coriander leaves. A excellent side dish with any type of rice varieties.

Tofu sambal is absolutely new dish for me as I have never heard about it. It seems to be a very tasty and delicious dish.I will try your recipe.
