Hokkien Prawn Mee
Prawn noodle(Hokkien Prawn Mee) is simply delicious and there's various way of preparing them.They are normally served with some slice of pork and beans sprouts. These two are the main ingredients one can find in their bowl of Prawn Noodle Soup. The broth is made from boiled prawn with their head intact which has to be fried. I couldn't find fresh prawns so I'm using seafood broth form my recipe.

Ingredients:
Serving Size: 4

1 packet egg noodles
4 cups seafood broth
20 jumbo prawns
1/2 sliced mushrooms
1 cup chopped boy choy
1 cup beans sprout
1/2 cup sliced baby corns
2tbsp minced garlic
1tsp pepper powder
2tbsp sesame oil
1tbsp Chinese Rice Wine Vinegar
chopped spring onions
fried onions
For the Sauce Paste:
10 tbsp of dark soya sauce
5 tbsp of light soya sauce
2 tbsp of oyster sauce
2 shallots sliced
1tbsp spicy bean sauce
1tsp red chilli paste
2 tbsp of sesame oil
1 tbsp Chinese cooking wine
1tbsp sugar
3 tbsp of cooking oil
2 shallots (coarsely chopped)
2 cloves of garlic (coarsely chopped)

Put all the sauce ingredients (except shallots, garlic and cooking oil) into one bowl. Mix well and set aside.Heat cooking oil and fry shallots and garlic until golden brown.Add the sauce ingredients and bring to simmer under low fire until the sugar melt. Keep aside.

Preparation Methods:
Coat the well and transfer to a bowl keep aside.Boil a big pot of water with a good amount of salt. The water should be super salty. Blench the egg noodles until the oil separates and drain. Blench the noodles in cold for few seconds and drain-keep aside.Add some oil to a pan and saute the garlic followed by all the chopped vegetable and prawns. Saute well-add the broth,pepper powder and vinegar.Bring to boil. Finally add the noodles. Allow the noodles to soak in the soup for few seconds and remove from flame-add the sesame oil. Transfer require amount of noodles to a serving bowl and add a few slice of spring onions and fried onion with the spicy sauce;

First time here and WOW my favourite food and recipes. I'm drooling all over. I just love Singaporean and Malay food. We were in Singapore and Penang for quite some years. I could literally live on hawker/kopitiam center food. Good to know you are also in Dallas.
