Szechuan Fried Noodles
For quite sometime my cooking sphere have being slow.Today I was able to sit down and glanced at my cooking journal. Oh my God!!! so many recipes that have being tried were kept aside for sometime.After shifting from USA I was kinda of more busy than before.An all time favorite dish of mine!!noodles tossed with spicy szechuan sauce and peanut oil is simply mouth-watering.

Ingredients
Serving Size:5


1 small packet rice noodles
1tbsp peanut oil
1/2 tsp sesame oil
1 cup thinly sliced chicken breast
1tbsp soy sauce
1tbsp fish sauce
1tsp sugar
1tbsp fresh grated ginger
2tbsp szechuan sauce
1tbsp Chinese Rice Wine
1tbsp oyster sauce
1 medium onion chopped
5 cloves garlic minced
1 celery stick sliced
2 carrots sliced
1 can sliced bamboo shoot drained
1/4 cup snow peas chopped
2tsp cornflour
1/2 cup water
1/4 cup shredded fresh basil

Preparation Methods:

Soak the rice noodles in boiling water for 3 minutes or until soft and drain.Keep aside.Heat the peanut oil and sesame oil.Add sliced chicken,soy sauce,fish sauce,sugar,rice wine szcehun sauce and grated ginger in batches.Stir-fry until the chicken is tender remove. Add onions and garlic to wok and stir-fry.Then add celery, carrots and all the remaining vegetable to the wok and stir-fry until the vegetable are fully cooked.Add the chicken,oyster sauce and blended cornflour and water-stir until mixture boils and thicken slightly.Finally add the noodles and mix well. Transfer the serving plate with shredded basil leaves.
