Spicy Tofu Briyani With Vegetables
Hey folks I'm back with another mouth-watering briyani recipe from my kitchen to yours. What a lovely weekend with my SIL and BIL in CBE. This weekend our daily routine of visiting Pollachi was brushed aside due to Sport Day Celebration in my daughter's school. She took part in 50 meters running race. Both my SIL and BIL stayed overnight in my apartment.It was great having family member over for a night chatting away rite!!! Both myself and my SIL decided to gang up to cook lunch for the first time. We always make plans to cook together but unfortunately something will prevent us from doing so. We wanted to prepare something different and then I remember that I got some tofu laying in my fridge for few day begging me to finish before expiring.
Since both our husbands are great fans of briyani. We decide to prepare tofu briyani with carrots and green peas. The combination of tofu marinated with chilly and turmeric powder and lightly fried was really good. I was really surprise that tofu combined perfectly with briyani. There wasn't any blend taste while eating the tofu and it mouth-watering. Definitely everyone should try preparing briyani with tofu. Serving Size:5 Ingredients:
2 cups rice
3 cups of water
2 cups of tofu marinated with 1tbsp chili powder , 1/2 tsp turmeric powder and salt
1/2 cup chopped carrots
1/2 cup green peas
1/2 cup chopped shallots
2 tomatoes chopped
1tbsp ginger garlic paste
2 green chilli slit lengthwise
2tbsp briyani masala powder
1/4tsp turmeric powder
1/2tsp chilli powder
1tbsp ghee
1tbsp peanut oil
1/2tsp cumin seeds
2 cardamom pods
1 small cinnamon stick
1 bay leaf
2 cloves
fistful chopped coriander leaves
fistful of chopped mint leaves
oil for shallow frying
Preparation Methods:
Soak the rice for 15 minutes -drain and keep aside. In a heavy bottom pressure cooker- heat oil and ghee- then add cumin. cloves,cardamoms,bay leaves, cinnamon. Saute them till the aroma of the spice are released. Then add the slice shallot and fry them till it turns brown followed by the chopped tomatoes followed by the ginger garlic paste. Saute them till they blend in with the onions.Add in all the remaining spice powder and salt.Once the oil starts to release add the chopped carrots and green peas. Meanwhile shallow fry the tofu til golden brown-drain and keep aside. As the vegetables become tender add the fried tofu and mix well. Finally add the rice followed by chopped coriander and mint leaves. Saute for 5 minutes add water.Lower the flame to medium and pressure cook for 1 whistle. Remove and serve hot...
