Soup is the epitome of comfort, a wonderful soul warming food filled with wholesome ingredients and fantastic flavors.Soup makes a wonderful addition to any meal, and once you make a pot or two, you'll discover it isn't really that hard to make. Piping hot bowls of soup will always warm and refresh you on cold days just like what I'm experiencing CBE for the past few days..Though nothing can beat cuddling up with a warm bowlful on a chilly night, soups aren't only game for the winter months so they can be fixed up on any day just to up fill up our tummy.After feeling down and sick for past 1mth time and frequent outburst of my kids in preparing some goodies to warm them up after school. Large quantity of potatoes and leftover pasta was crowing up my fridge and decide to prepare something out of them. They both paired up beautifully with minty chutney and the outcome was a bowl of Minty Potato Soup with Pasta...so homely and soul warming !! Perfect for the chilled evening .. Come on guys curled up in ur cozy sofa with my freshly made soup to quench ur thirst to warm up:)

Serving Size: 4 person
Ingredients1/2 kg potatoes peeled and sliced
2 celery stalks finely chopped
1 large onion finely chopped
2tbsp parsley coarsely chopped
4 cups of vegetable stock
3 cups of milk
1/2 cup diced carrots
1/4cup corn
1/2 cup minced cooked pasta of ur choice
3tbsp mint chutney
1/2tsp chilli flakes
1tbsp tomato puree
1tsp garlic powder
2tbsp of butter
salt and pepper to taste

Preparation Method:
Saute the onions in butter, add the celery stalks to it. Boil the potatoes in the vegetable stock with salt and cook til the potatoes are well cooked.add the celery mixture. Once cooled puree the mixture along with parsley in a blender.Pour the mixture into a pan and heat again. Then add the milk,tomato puree,chilli flakes, diced carrots corns,minced pasta and garlic powder. Let it simmer for 5 minutes. Sprinkle pepper and serve with hot toast.
