When the gentle wind knocks at every corner of my apartment and drags each one of us curling back to our comfort nest- a likely indication telling me to prepare something special to be whipped up in the kitchen. A perfect snack to enjoy - good food and warmth with the touch of friendly hand to grab something and pop into the mouth. What else "Panipuri" - loved by my family members.




As all know Panipuri -This popular street food doesn’t need any introduction! Potato, onion, chickpeas, sweet  chutney stuffed crispy puri drenched in sour and spicy mint flavored water easily fills one’s mouth and takes taste buds on a journey of heaven and it is no wonder that it’s a popular street snack along the length and breadth of India. The crispy dough balls, the tangy spice water and the stuffing will make your tastebuds dance with joy and you will be seen enjoying Panipuris non-stop. Trust me it will happen ๐Ÿ˜Š

Preparing pani and masala for panipuri at home is not only a healthier way of enjoying it but also allows you to customize it the way you like it. It is very simple to assemble and one can easily find puffed puri at any Indian grocery store or prepare at home anytime. The crispy puri with filling and flavored Pani will leave a sensational burst of flavors in your mouth ๐Ÿ‘…

The debate between different versions of preparing and about which one tastes better than the other is never ending, I obviously do not bother much about which version it is as I absolutely adore and thoroughly enjoy all the versions. Every version differs from the other in the proportions of the ingredients used to make pani and also the fillings used which makes each version taste different from the other. Here's the version which suits the taste bud of my family members.

Ingredients :
32 store bought puri
1 medium Onion, finely chopped
1 cup shredded carrots
1 cup boiled chanan 
1/2 cup Sev 

Ingredients for Pani:
1/2 cup Mint Leaves
1/2 cup Coriander Leaves, chopped
1-2 Green Chilli, chopped 
1/2 inch pieces of Ginger
1½ medium size Lemon
3 tablespoons Sugar
1 teaspoon Chaat Masala Powder
1/4 teaspoons Black Salt 
4 tablespoons Boondi
Salt to taste
4 cups Water

Add mint leaves, coriander leaves, green chilli, ginger and lemon juice in the small chutney jar of a grinder and grind to smooth paste.Transfer the mixture to a large bowl and add sugar, chaat masala powder, black salt and 4 cups water. Taste for the salt and add as required. Place the Pani in a refrigerator for at least 1-hour before serving 

For the stuffing - Potatoes Masala
  • 2 to 3 medium potatoes
  • 1 small to medium onion 
  • 1tbsp chopped coriander leaves
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon chaat masala powder
  • ¼ teaspoon red chili powder
  • black salt as required

Boil the potatoes till they are cooked. Peel the potatoes and then chop them.Finely chop the onion. In a small bowl, mix the potatoes, onions, coriander leaves, cumin powder, chaat masala powder and black salt. Mix well and keep aside.


Ingredients for Sweet Chutney:
1/4 cup jaggery 
1/4cup tamarind 
10 dates 
1/2tsp chilli powder
14tsp cumin powder
1/4tsp dry ginger powder 
Salt to taste


Preparation:
Soak tamarind in warm water for 20 minutes.Dissolve jaggery in little water.Remove the seed from the dates. In a pan boil together jaggery, tamarind and dates with just enough water. Add salt, chilli powder, jeera powder and dry ginger powder.Simmer and cook till it reaches a saucy consistency.Allow it to cool, strain it  using a soup strainer and transfer to a serving bowl .

Assembly the Pani Puri accordingly to preference:
Take each puri and gently make a large hole on its top-middle side with a spoon or your index finger or thumb for stuffing.Stuff each puri with masala .Sprinkle onion and sev over it and drizzle a drop of date tamarind chutney over it. Take pani-puri water in a medium bowl. Dip each puri in water and enjoy…
