Grilled BBQ Chicken Legs



Cookouts, picnics, and backyard barbecues are always a great way to gather friends and family, while enjoying the amazing summer weather. Some of our best family memories are when we gather with friends and family for a big grilling fiesta! I also love this because its also a chance to show others just how easy it is to turn the day into an explosion of laughter, games and heart-felt memories! It’s also a great time to enjoy the amazing flavors of summer food!  These delicious Grilled BBQ Chicken Legs are the ultimate cookout dish for any summer gathering. Summer is peeking tru my doorstep and stumbled upon these forgotten snaps while clearing my files few days ago. 


The following recipe have being laying in my draft for very long time. Time travels back to my first grilling experience in Owasso Tulsa with my hubby's colleagues in 2009. We really had great friends circle and enjoyed to the max whenever we have chance. The kids were to young to remember but it was fun filled evening outside my apartment with Ram & Tintu family. Wished I have a time traveling machine. Boy!!! those memories will always stay close to your heart after years to come.

My kids loves them, since they come with “handles” and they gets to eat with their hands - these easy and flavorful GRILLED BBQ CHICKEN LEGS will be an instant favorite you'll come back to all summer long! Nothing says summer quite like the smoky-sweet flavor of a backyard BBQ- cool way to beat the heat and fuel summer is always fun. It's time to grab your tongs, fire up the grill, and get cooking!




Ingredients:


12 chicken legs
½ cup olive oil
1 tsp sea salt
½ tsp ground black pepper
2 tbsp teaspoon chilli powder
½ tsp cumin
¼ tsp cayenne pepper
5 cloves garlic, chopped
3 tbsp chopped onion
½ cup chopped fresh coriander leaves
1 cup soda

Preparation Methods:

Place chicken legs into a large zip top bag. Pour olive oil into a glass bowl. Mix together salt, pepper, paprika, cumin, and cayenne pepper and add to olive oil. Add garlic, onions, and parsley. Mix together well with a fork. Slowly add soda as it will cause the mixture to foam and bubbly.


Pour marinade over the chicken legs in the zip top bag. Remove as much air as possible from the bag and seal. Turn the bag from side to side to make sure all chicken has been coated with the marinade. Allow the chicken marinade to sit up to few hours or overnight in the fridge for best results, turning the bag over every few hours to keep the chicken coated.


Brush the grill grate with olive oil to coat. Heat the grill to medium heat. Place chicken onto the grill and cook, turning as needed to cook both sides brushing the marinade. Remove chicken to a serving platter and allow to rest 3-5 minutes before serving.
