At times when I’m feeling at my nerves the only place that has its ways to cheer me up -Any guess guys!!! Well it’s none other than my kitchen . I always find my way to the kitchen whenever I feel bad or happy. It’s has its way to cheer up and boost up my energy level. Many have know that - Noodles are a staple food in many cultures made from unleavened dough which is stretched, extruded, or rolled flat and cut into one of a variety of shapes and I’m one of those who can have a plate of noodles anytime even when awaken from deep sleep. 

Thai style stir fried rice noodle dish, has to be one of my all time favorite meals and its amazingly magical balance of sour, salty, sweet and spicy created by the tamarind, fish sauce, sugar and chili sauce makes me to craving for almost every day.Thai noodles are some of the most popular in the world, and when you taste them, you'll know why...Pad Thai really only takes less than 10 minutes to cook and things go quickly after the first ingredient hits the pan so the secret to success is in making sure that you have all of the ingredients ready to go before you start cooking.   A “wow" your taste buds with its abundance of flavors and textures! Ingredients
Serving Size: 4 Persons

1 packet of Thai Wide Rice Noodles
2 tablespoons tamarind concentrate 
3 tablespoons fish sauce (or soy sauce)
1 tablespoons palm sugar or sugar
1 tablespoon chili sauce or to taste
1 tablespoon sriacha chilli sauce
2 tablespoon of cornstarch slurry
1 teaspoon pepper powder
1 tablespoon peanut oil
1 cup sliced chicken 
1 tofu block cubed
2 shallots, chopped
5 cloves garlic, chopped
3 eggs
2 tablespoons roasted peanuts, chopped
1 cup bean sprouts
2 green onions, sliced
1/4 cup cilantro, chopped
1 lime lime cut into wedges

Preparation Methods:
In a medium bowl combine the sugar pepper powder tamarind sriacha sauce fish sauce and chicken broth. Whisk until the sugar have dissolved and keep aside. In a large bowl combine the sliced chicken  the corn starch slurry and the remaining sauces. Mix well and keep aside. Soak the noodles in water as directed on package.

Heat oil in a pan. Add the tofu, shallots and garlic and saute for 2-3 minutes. Add the chicken - stir fry till the chicken becomes tender. Now add the sauce mixture -followed by the noodles and mix and move to the side of the pan. Finally break in the egg, let it set a bit and then mix it into the noodles. Add the peanuts and bean sprouts and cook for a minute. Add the green onions and cilantro and remove from heat.
