Pepper Chicken
Brrrr. It is freezing cold out there and on wintry days like these, all I want is hot, comfort food.The climate in Dallas Plano is getting worse each day and making it impossible to carry out anything as planned. Only option is to find comfort in my home with something spicy and hot. In my case, comfort is always a steaming bowl of spicy curry. Peppery and nutty with a kick, this curry demonstrates the different levels of flavorful that pepper can bring to a dish. In this recipe, it is toasted and cooked into the sauce and then sprinkled on at the end for extra aroma and heat.
Pepper chicken is one the easiest preparation of chicken. Only few ingredients and it is the most flavorful spicy chicken you will ever have. It is the magic of coconut oil and curry leaves that gives this amazing aroma to this chicken preparation. Crushed black pepper adds nice spicy crunch to the bite.
Chicken is marinated with red chilli powder, garam masala, salt and lemon juice for 30 minutes. Then it is cooked with loads of onions, ginger and garlic, finally sprinkled with fresh ground pepper.
Ingredients:
- 500 Grams of Chicken with bones
- 1 Teaspoon Red Chilli powder
- 1/4 Teaspoon Turmeric Powder
- Juice of 1/2 Lemon
- 3 Tablespoon Coconut oil
- 1/2 Teaspoon Fennel Seeds
- 2 Large Onions chopped finely
- 10 Garlic Cloves
- 1 Inch Fresh Ginger Piece
- 1 Green Chilli
- 10 curry leaves
- 2 Tablespoon Coriander powder
- 1/4 Teaspoon Turmeric Powder
- 1 Teaspoon Garam Masala
- 1 Tablespoon Black pepper corns
- Salt to taste
Preparation Methods:
Marinate chicken with chilli, turmeric and lemon juice. Keep aside for 1 hr.
In a pan, heat coconut oil. When the oil is hot, add fennel seeds and curry leaves. Let the leaves splutter. Then add ginger, garlic, green chilli and fry for a minute. Add onions and fry on low flame until onions are soft Add coriander powder, turmeric powder and 2 tablespoons of water and fry the masala for 2 minutes stirring continuously.
Now add the marinated chicken to the pan and give it a nice stir. Allow the chicken to be tender by adding 1/2 cup of water. Meanwhile in a zip pouch, add black pepper corns and crush it. Add crushed pepper corns to the chicken and give it a nice stir. Switch off the flame when the chicken is cooked through.
