Thakkail Kulambu

Thakkali Kulambu
This is one of my son's favorite curry for dosai. He will have at least 3 dosai with Thakkali Kulambu. A very simple curry to prepare. I used to prepare this very often when I first came to USA. After some time I got sick of preparing the same old curries again and again. After a very long time I'm preparing as my hubby got a lot of tomatoes from Sam's Club and they are were get mushy.

Ingredients

For wet grinding
:

10 ripe Roman tomatoes
1 onion chopped
5 garlic cloves
a small ginger
5 curry leaves
1tsp cinnamon powder
5 cloves
3 cardamon pods
5 dried chillies
2tbsp coriander powder
1tsp turmeric powder
3tbsp coconut powder
1/2 cup water

For seasoning:
1tsp mustard seeds
1/2tsp cumin seeds
1/4tsp hing powder
3 curry leaves
2 dried chillies
salt to taste

Preparation Methods:
Coat a frying wok with 3tbsp oil and roast all the ingredients mention under wet grinding. Blend them into a fine mixture once cooled. In the same wok add 2 tbsp oil and add the mustard seeds. Once it starts to crack add the remaining ingredients -saute for 5 minutes and then pour the blend mixture. Once the mixture starts to boil adjust the level of salt and remove from flame. Served with chopped coriander leaves with iddly or dosai.
