Preparation Method:
Heat oil in skillet and saute the coriander leaves for 2 minutes, Then add the rice and 2tbsp lemon juice.Toss and season with salt.Remove and transfer to serving bowl
1 big red onions roughly chopped

In a large bowl toss all the ingredients and mix well.Keep aside

1 cup corn
1 cup shredded grilled buffalo chicken
1 cup guacamole
1-2 cups shredded cheddar cheese
1 cup finely chopped lettuce
1 cup tomato salsa
1 cup sour cream
1/4 cup stored brought salsa verde (a mixture of tomatoes and jalapenos)
In a large bowl layer the base with the coriander rice followed by the sauteed onions and bell pepper. Then add the black beans followed by the shredded chicken.Add the onion and tomato mixed followed by a couple spoonful of the salsa verde. Then add the corns,tomato salsa and chopped lettuce leaves. Finally add the shredded cheese and big spoonful of sour cream and guacamole. Sit back and enjoy each spoonful of these health rice bowl.
