Marinate For Ladies Finger:
20 medium size ladies finger diced
1tsp garam masala
1tbsp chillie powder
1/4tsp turmeric powder
1tsp curry masala
a pinch hing powder
1tbsp oil
salt and pepper to taste
Marinate the ladies finger with all the spices and leave it for 2 hours or overnight.
1 large onions sliced thinly
1 tomato finely chopped
1/2tsp mustard seeds
1tsp ural dal
1/2tsp cumin seeds
3 garlic clove minced
a sprig of curry leaves
salt if needed
chopped coriander leaves
Preparation Methods:
Add 2tbsp of oil into a heavy bottom pan on medium flame and saute the marinated ladies finger till the stickiness are completely remove. Remove from pan and keep aside.Coat another non-stick skillet with 2tbsp oil and once heat add the mustard seeds-as it starts to splutter add the cumin seeds,curry leaves,garlic and onions. Saute till the onions turned slightly brown and followed by the chopped tomatoes. Allow the juice from the tomatoes to be released and finally add the ladies finger. All them to blend completely and adjust the level of salt and spices-add if needed. Remove and garnished with chopped coriander leaves :)
