Puliogare is always a comforting food for me esp during these winter seasons -I'm always looking forward to prepare them very often. Very special one too:) A cherishable dish for me..I prepare mine a bit differently by add chopped onions and garlic clove to the rice. It taste awesome.
Ingredients
Serving Size: 5
Seasoning Ingredients
6tsp sesame Oil
1tsp mustard seeds
1/2tsp cumin seeds
2tbsp ural dhal
2tbsp roasted peanuts
1tbsp channa dhal
3 dried chillies broken
curry leaves
For grinding:
1/2 cup freshly grated coconut
2tsp coriander seeds
1tsp peppercorns
a pinch of hing powder
4 dried chillies
1tsp cumin seeds
few curry leaves
1tbsp sesame seeds
1tbsp channa dhal
Roast all the ingredients one by one and grind until smooth except coconut.Finally add the coconut and grind once again to mix well.
2 cups cooked rice mixed with salt ,1/4tsp turmeric powder and 1tbsp tamarind juice overnite
1/2 cup thinly slice onions
3 garlic cloves minced
1/4 cup roasted peanuts
chopped coriander leaves
1/4 cup tamarind juice.
Preparation Methods:
Heat oil in a pan.and splutter all the ingredients for seasoning one by one followed by the sliced onions and garlic.Once the onion are browned add the tamarind juice and mix well. As it starts o boil add the grounded spice powder.Turn heat to medium and boil for few more minutes till the juice becomes thick and oil separates.Then add the roasted peanuts and give a finally mix.Coat a wok with 1tbsp of ghee and add the cooked rice and puli paste on a very low flame. Mix them well and serve with chopped coriander leaves..
