This is another of my recipe from Singapore collection which is just normal fried rice with a touch of the Malay's spices and flavors which is well like by my hubby. I had some rice leftover and decide to prepare this wonderful flavorable Malaysian Nasi Goreng.
Nasi Goreng (Malaysian Style Fried Rice)
Ingredients

1 cup leftover cooked rice
1 red onion chopped finely
2 chicken breast diced
3 large eggs, beaten
4 small shallots, peeled
3 cloves garlic, peeled
1 cups finely chopped or shredded vegetables
3 red chillies
1/2tsp shrimp paste
1/2tsp sugar
chopped coriander leaves
chopped spring onions
For Sauce:
2tbsp dark soy sauce
2tbsp light soy sauce
3tbsp tomato ketchup
salt to taste
Preparation Methods:
Break the overnight/leftover rice using the back of a spoon so they don’t clump together-keep aside.Coat a large skillet with cooking oil and heat over medium-high heat. Pour in eggs, reduce heat to medium-low and cook. Slide out of the pan onto a clean cutting board. When cool enough to handle chop it to bite able size and leave aside.Place chili, garlic, shallots, salt, sugar and shrimp paste in a mortar and pound with the pestle to form a paste.
Heat the wok add couple spoons of oil,saute the chopped onions til browned followed by the pounded paste. Once the raw smell are removed add the diced chicken cubes and the vegetables. As they become tender pour the sauce and allow the mixture to blend. Finally add the cooked rice and saute well. Adjust the level of salt and add the fried eggs,chopped coriander and spring onions. Remove from flame and transfer to serving platter.
