Spicy Cauliflower Rice
Have you wonder how much you are being respected by your loved ones and family member?When such situation arise how many are there so called friends and relatives are to help you? There was such an incident which made me think straight and know who is real and a friend indeed is... As I have mentioned before when I first land in USA -I really got to know the taste of ice storms and how bad the climates can become in Owasso. That's really a very terrible experience for me as both kids were too young especially my daughter who was only 1 yrs old . We were left with no electricity for a week. Tell me what can one do in USA without electricity. But thank God one of my hubby's classmate living in Dallas-Weatherford gave us a helping hand. His wife Sharmila was really very kind and helpful and gave a some space in their home for a week desipte being pregnant. She welcomed us with this wonderful spicy cauliflower rice f with Shallot Sambar( will share the recipe soon) when we reach there and it was really very good. It tasted heavenly and really felt being at my home with our loved ones:) After a very long time I have prepare the recipe of hers and wanted to share them with you guys...I have understood the value of good friendship from their hospitality :)

Ingredients
Serving Size: 5

1 cup cooked rice preferably leftover
1 cup cauliflower chopped
1 red onion chopped
1 tomato chopped
2 clove garlic minced
2 green chillie minced
1/2 tsp turmeric powder
1tbsp curry masala powder
1/4 tsp chillie powder
1/2tsp cumin seeds
1/2tsp mustard seeds
1tsp channa dal
1tsp ural dal
1tbsp ghee
few sprig curry leaves
chopped coriander leaves

Preparation Method:
Add some oil to wok and once heat add the chopped cauliflower with little salt and turmeric powder. Saute til they become tender and mash them finely using the back of the spoon-keep aside. In the same pan add ghee and splutter curry leaves,mustard seeds,cumin seeds,channa dal ,ural dal and garlic followed by chopped onions and green chillies. Fry til the onions turn brown- add the tomatoes with all the remaining spice powder and the cauliflower. Saute till all blends well. Finally add the cooked rice and mix well. Adjust the level of salt and transfer to a serving platter garnished with chopped coriander leaves.
