Crispy Hot Sour Chicken In Spicy Coconut Sauce
Can you feel the total satisfaction after preparing a wonderful dish for your kids when they say "Mummy tht curry was so tasty and we want it everyday"? We normally feel overwhelmed by these small encouragement given by our loved ones esp the kids.These days, due to a busy schedule, my experiments in kitchen have reduced a lot.There are certain recipes which always remain our favorites and we can never be tired of cooking them over and over again. One such favorite recipe that I prepare very often and always becomes a big hit in my house and among friends too which is none other than CHICKEN :) My hubby used to say that I have a special touch in preparing chicken dishes.

Ingredients:
1 cup plain flour
1/3 cup cornflour
1 egg white
1.5 cup water
2tsp grated lemon grid
1 cup boneless chicken fillets roughly chopped
plain flour extra
vegetable oil for frying
2tsp peanut oil
2 cloves garlic crushed
2tsp grated ginger
2 large onion sliced
1 large red pepper sliced
1/3 cup fresh lemon juice
2tbsp soy sauce
2tbsp tomato sauce
2tbsp spicy chili paste
chopped coriander leaves
1 cup coconut milk

Preparation Methods:
Sift the flour and cornflour into a bowl gradually stir in the egg white,water and rind;mixed to smooth batter. Toss the chicken fillets in extra flour,shake off excess flour and dip inn batter. Deep fry the chicken in batches until browned and tender, drain on absorbent paper. Heat peanut oil in wok. Add the garlic,ginger ,onions and red pepper: stir fry till tender.Add the sauces and lemon juice. Add the coconut milk -as it starts to boil add the chicken fillets and mix well. Transfer to server plate garnished with chopped coriander leaves.
