Stuffed Aloo Parathas With Minced Chicken Topping



How many times have you salivated at the thought of those lip-smacking stuffed parathas with dollops of butter on them. Hmmm..heavenly:) hot and fresh from the griddle are always sumptuous and mouth watering :) This dish reminds me of childhood as everyone in family loves to have stuffed parathas esp with sardine. . I've tried making these stuffed parathas several times but couldn't get them right. the stuffing always spills out and eventually I gave up trying. After marriage I got hooked up in the blogging world and my kitchen turn out to my laboratory for my cooking experiments but never thought of trying to make a perfect stuffed paratha again.One day my son came back from school saying that one of his Indian friend (I made these when I was in USA) mom made chapatis with potatoes inside and it was yummy. He kept pestering for the parathas but I was not in mood to prepare them again after those numerous flops trying. My hubby encouraged me to give a final try and they came out perfectly without spilling or tearing.I wanted to try something new and came up with this idea of of adding some meat as topping for my stuffed Aloo paratha instead of mixing them with aloo.

Stuffed Aloo Parathas With Minced Chicken Topping

Ingredients
Serving Size:4
1 cup of wheat flour
1/2 cup of hot milk

1/4 cup of curd or yogurt

2tbsp of ghee

1/4tsp of sugar
1/4tsp of salt
hot water
1 cup of cooked minced chicken


For the filling:

1 big onion, finely chopped

1 tomato finely chopped

5 boiled potatoes mashed
1tbsp ginger garlic paste

1/4 tsp chilli powder (adjust to taste)

¼ tsp turmeric powder
1 1/2 tsp coriander powder

1 tsp cumin powder

1 tsp garam masala powder

salt to taste
chopped coriander leaves
Preparation Methods:
Heat the oil in a pan and add the ginger, garlic pastes,tomatoes and chopped onion. Sauté everything till the onions soft. Add the spice powders and sauté, over medium heat, for a minute. Then add the potatoes, salt and chopped coriander.Mix everything well and then take off the heat. Allow to cool and divide the mixture into equal portions. Roll the portions into balls.
In a large bowl sift the wheat flour,sugar and salt. Make a well in middle of the flour and pour the milk,curd or yogurt. Knead the mixture into a smooth dough adding enough of hot water.Divide the dough equally and roll out them and place the stuffing in cench of the dough.Gather all the edges together and flatten it slightly and roll out making sure that the stuffing doesn't spill out. Sprinkle some of the cooked minced chicken and gently press on one side of the paratha. Heat a heavy based frying pan or griddle on a medium heat. Place the rolled Parathas on the griddle. While on the girdle press the edges of the Parathas with a paper towel . You will find that small bubbles start forming on the Parathas that means it is getting cooked. Turn over and cook the other side. The Parathas may puff up. Flip over cook the first side again. Serve with hot melted ghee or butter brushed over one side of the Parathas.
