I’m back! I know I've been gone longer than usual and I’m sorry for that, but the past few days have been difficult and busy to say the least. Without going into too much detail.. This recipe is a quick and easy side vegetable for many Asian themed meals. The last time I made it, served it alongside with Shrimp curry-a fav of my fussy eater.Actually I wanted to prepare Sambal long beans but ended up with tis. Anyway the taste was good and my fuss eater finished up her plate before anyone...a good sign rite...
Ingredients
Serving Size:4
1 cup chopped long beans
2tbsp ghee
1tbsp freshly grated ginger
1tbsp freshly chopped red or green chillies
2 cloves of crushed garlic
1tsp mustard seeds
1tbsp crushed coriander seeds
1/2tsp fenugreek seeds
1/2 cup thick coconut milk
chopped coriander leaves
Preparation Methods:
Heat the ghee in a large frying pan- add the ginger,garlic,chillies,mustard seeds and fenugreek seeds. Once all the ingredients added are lightly browned- add the chopped long beans and salt. Saute the beans until tender.Finally add the coconut milk and cook till most of the liquid have evaporated. Transfer to a serving dish sprinkled with chopped coriander leaves.
