Gosh!! I just realized that I have huge collection of dishes that I have prepare while I was back in USA. Oh boy...to many of them are laying idly in my folder over- crowing my new dishes. Guess what- they needed to be post but when hmmmm sigh!!! Let's see what recipe should I share with u folks tday. That's it : Chicken Ball Noodle Soup With Garlic Croutons...

Due to the frequent change in climate and lack of social contact we used to send our weekends shopping and patronizing new eateries. Normally I will pester my hubby to take us to buffet lunches. A visually stunning restaurant with capacity of about 200 or more seats- a great place to enjoy and celebrate any occasion like b'days or just simply out of my kitchen. These buffets comprise a great variety of items that you certainly spoilt for choice. One of such dishes which makes us to return back was this soup noodle. I was totally blown away with it's flavorful and comforting rich taste with slight combination of Indian spice. The following recipes differs a bit- from my kitchen to yours. Serving Size: 4

Ingredients For the soup:
1 cup chicken carcass
6 cloves
3 cinnamon sticks
6 star anise
1tbsp peppercorn
2tbsp dark soy sauce
10 clove garlic
few Ginger roots
10 cups of water
1 cup mixed vegetable of your choice
Salt to taste

Add all the ingredients to a pressure pan and cook for 6 whistle. Drain and keep aside.

For the chicken balls:
2 cups minced chicken
1 cooked potato chopped
1 onion
2 red chillie
2 garlic clove
1tbsp coriander
1tbsp cumin
2tsp soy sauce
1/2tsp brown sugar
juice of half lemon
1 egg

Add all the ingredient to a food processor and process in short burst not to over chop the ingredient . Shape to balls. Boil the ball and keep aside.

1 packet egg noodles
1/2 cup enoki mushrooms
1tbsp finely grated lime rinds
1/2 cup sliced spring onions
2tbsp chopped coriander leaves
3tbsp minced garlic
2 slice of bread
5 cloves of curshed garlic
2tbsp olive oil

Preparation Methods:
Discard the crust from the bread and cut into 1cm inches pieces. Combine the crushed garlic and olive oil in a bowl. Toss the bread pieces and place the piece in a single layer on a oven try. Bake for 10 minutes. Keep aside. In a large pan add some oil and saute the mince garlic followed by the mushrooms. Saute til the mushrooms become tender. Add the prepared stock and bring to boil. Add the noodles. Allow it to cook for 10 minutes and finally add the cooked chicken balls.Ladle the noodles in a serving bowl garnished with spring onions,coriander leaves, lime grinds and few pieces of the garlic croutons.
