Currant Slices
As I scan through my recipe drafts in my folder- I have yet to post many cakes recipe which I have done many years ago with my collage friends. Those were unforgettable moments to cherish. The following recipe was done when I first started my computer course in a private intuition.A place where I came to meet people from all over the world..different languages,culture and many more.I really had a very difficult time scanning the snaps to perfection. We happened to visit my friend Nancy's aunt living in Bedok for Christmas and as we about to reach her place both myself with Nancy and our gang decide to prepare something for her.After a chaos of discussing -we decide to bake a simply yet delicious Currant slices for her...Anyway we really made her kitchen mess but the cake came out perfectly and she was delight that messiness of the kitchen was completely washed out of her mind. I just wish I would get back those carefree days now..time really flies and still wonder what my collage friends are doing now...really miss u guys:(
Serving Size: Makes abt 20 pieces
Ingredients:
1/2 cup currants
1/4 cup red wine
1 cup plain flour
1 cup rice flour
1tsp baking powder
1tsp mixed spices
3/4 cup caster sugar
125g melted butter
2/3 cup fresh milk
2 eggs lightly beaten
1egg white lightly beaten
more caster sugar to sprinkle
Preparation Methods:
Preheat the oven to 180 C. Line a lightly greased shallow tin with non-stick baking paper. Soak the currants in the wine covered for 1 hour.Sift the flours,baking powder and the mixed spice in a large bowl. stir in the sugar. Make a well in the centre and add the melted butter,milk and the eggs.Add the currants and mix gently.Spoon the mixture in the prepare tin. Brush the top with egg white and sprinkle with caster sugar. Bake for 25 minutes. Cool and cut into slices and sprinkle more sugar if needed and serve.
