Frothy Hot Chocolate With Buttermilk Pancakes
The weather can play a big role in our everyday lives with rain,snow,wind,temperature and sunshine all affecting our daily activities. It could be also extremes with storms,tornadoes and hurricane common in various part of the world. Thank god there's no such things in India and Singapore. Singapore's weather is uniformly warm and humid,experiencing year around showers. Singapore is characterized by a hot and humid climate which is located just 1 degree north of the equator, it quite naturally enjoys a tropical/equatorial climate and doesn't have clear-cut seasons like summer, spring, autumn and winter. As we see I haven;' experience the four seasons.

Back in USA I had the really taste of the four seasons- summer, spring, autumn and winter. I have very bad experience when n I first landed in USA Owasso...the state was struck with ice storm and further more with no electricity for 10 days..Image how to mange that situation but we did survive with help of good friends. When everything was back to normal..snow fall !!! "Falling snow like it is light and fluffy, just like a cold feather that melts to cold water when it hits heat." Dressed in layers of cloths I open the door of my home and the cold air stings my face. I step forward into the deep, soft snow and hear the sound of a muffled packing of frozen wetness. I look at the cloud..imaging how they fall from and thinking how the snowflake seems like a frozen flake of a billowy cloud. It's cold, and the snow that falls on my upturned face freezes on my eyelashes--until I blink--and now the warmth of my cheeks melts the snowflake and it's melted liquid runs to my mouth. Hmm those we days in Owasso and to enjoy these moment with a steamy mug of Hot Chocolate and buttermilk pancakes is a welcome treat on a snowy day. I have always enjoyed the moments of standing at the stove heating milk and chopped chocolate until the chocolate melts and the milk becomes hot and foam..

These buttermilk pancakes have a light and spongy texture and their flavor only hints of the richness and tanginess that buttermilk offers. What else do one needs to enjoy those coxy moment of snow in living room with loved ones surrounding and watching a favorite movie.

Serving Size: 4

Ingredients:
For Buttermilk Pancakes
3 cups all-purpose flour
3tbsp white sugar
3tsp baking powder
1 1/2tsp baking soda
3/4tsp salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted


Preparation Methods:
In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!

Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

For The Frothy Hot Chocolate:
4 cups of milk
1 vanilla pod
100g bittersweet chocolate gated
30g milk chocolate grated

Preparation Methods:
Pour the milk in a heavy pan. Split the vanilla pods lengthwise and add to the milk. Add both dark and milk chocolate. Gently stir the chocolates until all have melted and the mixture is smooth. Then whisk until it boils. Remove the pod and pour the hot chocolate into a coffee mug and serve. It would taste great with a dollop of whipped cream and dusting of coco powder or even with grated chocolate.
