Minty Fried Mini Iddiles
Usually most of the kids loves to enjoy many types of dishes with different taste esp colorful in presentation. My son is not a great fan of idly at all. I have add his favorite mint chutney as the sauce for prepare this finger-licking evening snack. Will be back with another recipe soon. Ingredients:
Serving Size:4

2 cups of steamed mini iddles
1 large onion finely chopped
1 medium tomato finely chopped
1tbsp ginger garlic chillie paste
1tsp mustard seeds
1tsp cumin seeds
1tsp channa dal
few sprig curry leaves
salt to taste
1tsp chili powder
1tbsp light soy sauce


Ingredients for Mint Chutney:
1/2 cup mint(pudina)
2 dried red chillies(dry)
1tsp mustard seeds
2tsp urad dal
1tbsp tamarind juice
salt to taste
1tsp hing powder

Preparation Methods:
Wash and coarse chop the mint leaves In a pan heat the oil add urad dal and chilliies.Fry for a minute. Keep it aside. In the same pan add the mint and fry till it changes color and once it is cooked it shrinks to half the original quantity.Let it cool completely . Add the tamarind and hing and grind it to a fine paste and keep aside. Add more oil to the same pan and sputter the mustard seeds followed by the curry leaves,cumin and channa dal. Once they slightly brown add the ginger garlic chillie paste and til the oil stared to separate. Then add the chopped onions  and fry for 10 minutes followed by the chopped tomatoes and the chilli powder. Add the mint chutney and salt. If u want add some water and finely add the iddles and combine well. Garnish with pomegranate seeds and serve hot.
