I don't know abt u guys out there but whenever I decide to prepare pure vegetarian dishes- potato is a must for the kids but somehow my hubby dislike the idea of making potato too often at home. There's no such thing in how to prepare a perfect potato stir fry. You just cook them however you want, add anything you like and they never fail to impress you. Potatoes have their way to impress the eater esp the kids..anything cooked with potato just goes straight to tummy without any fuss..The following recipe is my childhood favorite potato dish with the combination of carrots and cauliflower.The outcome of this combination is just fantastic and delicious... You have to try this guys-trust me!!!
Potato,Carrot and Cauliflower Fry
Ingredients:
Serving Size: 4 person
1 cup chopped potatoes
1/2 cup chopped carrots
1/2 cup cauliflower florets
2 tablespoon oil
1tsp cumin seed
a pinch asafetida
1tbsp gram flour
6 whole red chille
1 green chillie
1/4 cup yogurt
1tbsp sesame seeds
1tbsp coconut powder
tbsp ginger garlic paste
1tbsp coriander powder
1tbsp funnel seed powder
1/2tsp turmeric
1/2tsp red chili powder
1/2tsp paprika
salt adjust to taste
1/2tsp garam masala
chopped cilantro
Preparation Methods:
Heat the oil in a frying pan over medium high heat.Fry the potatoes till they are cooked through; turn the potatoes few times while frying.Take out potatoes with a slotted spoon place on a paper towel. Keep aside.Add some and fry the cauliflower-drain and keep aside.Add more oil to the pan- stir-fry the sesame seeds for about a minute until seeds lightly change color and blend with coconut, ginger, green chili, and make it into a paste.In a small bowl mix, sesame paste, yogurt, ginger, green chili, coriander powder, funnels seed powder, paprika, red chili powder, and turmeric into a paste. Keep aside.In the same pan add oil-Add the cumin asafetida and cumin seeds. After the cumin seeds crack, add whole red chili and besan and stir-fry for about half a minute until the besan is golden-brown.Add the spice paste and stir-fry for about 2 minutes on medium heat until the spices starts to separate from the oil.Add the spice paste and stir-fry for about 2 minutes on medium heat until the spices starts to separate from the oil. Add the potato,cauliflower and the carrots. Add some water and cook on low flame until it thickens and spices get blended with the vegetables.Add the cilantro and garam masala cover the pan and turn off the heat.
