Minced Chicken With Red and Green Chillies
As I was laying awake early morning sipping a cup of steaming coffee thinking about my teenage life back in my hometown.It's something beyond my imagination..we should cherish those beautiful moments. Getting up early in the morning, quarter to five, taking a quick brush and face-wash water in a backpack, don the track pants and out strolling through nature's bounty.Newspaper vendors with loads of paper on their motorcycles make their rounds. Sometimes they can hardly be seen because the newspapers cover their headlights. They take some risks riding around like this, but I suppose they are used to it."Walking alongside the canal brings you to numerous scenic locations. The way the sunlight hits the buildings; the outline of the magnificent constructions. The friendly faces and the great bargains offered down the path.Alas, when I feel lazy from all that walking, I will plop down one of those benches nearby and stare, appalled at the beauty of it all. Everything moves around you, while you stay stationary, the rest of the world continues ahead. It leaves you in a peaceful moment and longing for more....it's time to stop. Perspiration has made its appearance finally, and the empty stomach demands attention. A few quick snacks and a mouthful of water does the trick, and one is on the way back from a journey that promises to never end, though end it must, as all things do.

Ingredients:Serving Size: 4 person
1 cup chicken breast fillet skinned and cubed
3 red chillies
3 green chillies
1tsp soy sauce
1tsp oyster sauce
3 red onions chopped
2tbsp ginger garlic paste
1tsp chilly powder
1tbsp lemon juice
chopped coriander leaves
Boil the chicken until tender. Minced the chicken in a food processor and keep aside. Cut the chillies half lengthwise and remove the seeds. cut the flesh into thin strips. Heat oil in wok saute the onions and ginger garlic paste til fragrant. Add chilli powder ,soy and oyster sauce and fry from sometime Add the minced chicken and season with enough salt and saute well. then add the lemon juice and chillie strips and stir-fry for another 5 minutes. Remove from flame transferring to serving plate garnished with chopped coriander leaves
