There are many countries with their own version of satay, but the Singapore satay that I grew up with trumps all the Thai, Filipino or Indonesian versions. It's also one of the many things I miss when I'm in India So I decided to treat myself one day to satay. Preparing a dish from scratch is always fun and the messy kitchen is a burden but the outcome was excellent; finger licking good!!!




Instead preparing the normal version of skewering  I just stir fry with the peanut sauce..my version of chicken satay. I happened to prepare these while I was visiting my parents last Dec in my hometown. I wanted to try out this recipe for quite sometime but never really got the chance to prepare them  from scratch  What's satay ..for those scratching or cracking your brains-Satay, delicious skewers of spice-marinated meat, are really popular in Singapore, found in hawker centres, in pasar malams (night markets) which comes with a generous bowl of peanut sauce, pressed rice cakes, cucumber and onions. On the table in just minutes, this one-bowl Asian meal beats delivery: It's faster, tastier, and better for you.This chicken dish is done in minutes and guaranteed to satisfy your takeout cravings. Ingredients:

Serving Size: 5 person
1/2 cup crunchy peanut butter
2tbsp soy sauce
1tsp grated lemon rind
1tbsp lemon juice
1/2tsp dried crushed chillies
1 clove garlic crushed
3/4 cup coconut milk
2tsp brown sugar
1 med red onion chopped
1tsp ground cumin powder
1tsp ground turmeric powder
2tbsp chopped coriander leaves
1tbsp peanut oil
500g chicken breast thinly sliced
2tbsp chopped unsalted roasted peanuts
2tbsp chopped water chestnut
1/2 cup oyster mushroom sliced
4 green shallots sliced

Preparation Methods:
add the peanut butter, half the soy sauce, rind,lemon juice, chillies, garlic, half the coconut milk and sugar to a small pan ;stir over low flame without boiling-just heat through. Process onion, remaining soy sauce,spice powders and coriander until smooth.Heat oil in wok-add the chicken and onion paste. Stir-fry until the chicken becomes tender. add the remaining ingredients and the coconut milk-stir until the sauce thicken.Transfer the serving dish and pour the sauce over and serve.
