Brazilian Chocolate Chiffon Cake

Brazilian Chocolate Chiffon Cake Serving Size:12 Ingredients 2.5 cup sifted cake flour 2 cups sugar 3tsp baking powder 2tsp instant coffee powder(mix with 1btsp of water) 1tsp salt ½ tsp cinnamon powder ½ cup oil 5 eggs separated ¾ cup water 2tsp vanilla essences 3 ounces unsweetened baking chocolate melted ½ tsp cream of tartar Preparation Methods: Preheat oven to 350 C. Sift cake flour,sugar,baking powder, instant coffee powder, salt and cinnamon powder together into large bowl. Make well in centre of the flour mixture; add oil, egg yolks, water and vanilla essence and beat until the mixture is smooth. Add melted chocolate to flour mixture ad blend well. In another small bowl combine the cream of tartar and egg whites. Beat until egg whites fluffy. Gently fold egg whites into chocolate mixture until well blended not stir. Potato Masala for Poori

Potato Masala for Poori Serving Size:4 Ingredients 1 cup boiled potatoes diced 1 cup chopped onions 2 tomatoes chopped 1 green chillies finely diced 2tbsp besan flour made to paste with 2tbsp of water 1tsp mustard seeds ½tsp cumin seeds ¼tsp hing powder Itsp ural daal 1tsp chaanal daal ½tsp turmeric powder 3 curry leaves Chopped coriander leaves Preparation Methods: Coat a frying pan with 2tbsp oil, add mustard seeds. Once it starts to crack then add cumin seeds, curry leaves, ural and channal daal, chopped onions, and tomatoes green chillie and turmeric powder. Saute the mixture till the onions and tomatoes are cooked well. Then add the potatoes, hing powder and besan mixture. Once the curries become thick removes from flames and serve hot with chopped coriander leaves.

Singapore Indian Mee Goreng

Due to the hectic life-style and working culture most Singaporean prefer to have food out rather cooking at home. In every hosing estate there would be either a food court or hawker center selling local food till midnight.Kopi tiams in Singapore are also commonly found in almost all residential areas as well as some industrial and business districts where you can also find the local food as well .Indian Mee Goreng is only of the local taste bud of most people living there. It's yellow egg noodle cooked with bean sports,bean curd ,minced mutton and potatoes. I used have Mee Goreng whenever I feel like eating...simply delicious..Many restaurant do have Mee Goreng in their menu but it never taste the same as done in the hawker center and cheaper too. $2 per plate with fried egg as topping...hmmm...mouth-watering when thinking about it...well too bad I cannot go back to have Mee Goreng so I'm going to pamper myself with my version of Singapore Indian Mee Goreng..it will never taste

Vathal Kolambu

Vathal Kolambhu Serving size:4 Ingredients: ½ cup varthal mix ½ cup tamarind juice 3 tomatoes chopped 1 onion chopped 3 garlic crushed 1tsp fish curry powder Salt to taste 1/4tsp fenugreek seeds 1tsp mustard seeds 1/2tsp sumin seeds 4 dried chillies ¼ tsp hing powder ¼ tsp tumeric powder 5 curry leaves 1tbsp coriander powder 2tbsp coconut powder Preparation Methods: Blend tamarind juice,half the onions and tomatoes,garlic,3 curry leaves,dried chillies,fenugreek seeds, coriander powder,turmeric powder and fish curry powder to fine paste. Keep aside. Soak the dried vathal mixed with ½ cup of hot water. Keep aside. Coat a fry pan with 3tbsp of oil. Add mustard seeds. Once it starts to crack add cumin seeds, remaining curry leaves, onions and tomatoes. Sauté for 5 minutes, then squeeze out the water from the vathal and add to the pan. Let the vathal mixed well with mixture. Pour in the blend paste-adjust the level of salt

Mixed Fruit Kesari Traditionally in South Indian homes there's a custom to serve sweet to their guests and relatives who visit their home for the first time. Kesari is one of the most easiest recipe to prepare.Kesari is one of my favorite Indian sweet which I can eat everyday..it can never satisfy my sweet tooth. Rice Flour Chicken Curry Serving Size:4 Ingredients 1lb boneless chicken breast 1/4 diced tomatoes 1/4 diced shallots 1 small onion chopped 3 cloves garlic minced finely 3tsp grounded pepper 3tbsp rice flour 1tsp garam masala 1tsp chillie powder 1tsp turmeric powder 2tbsp curd 1tbsp chicken curry masala 1tbsp tomato ketchup 1tbsp ghee 1/4 coconut milk salt to taste 1tsp mustard seeds 1/2tsp cumin seeds 1tbsp sesame seeds 1 cinnamon stick 3 cloves 2 cardamom pods 2 dried chillies Preparation Methods : In a large bowl add the chillie powder, turmeric powder, garam masala , curd, rice flour ,salt,ghee and 1tsp pepper -mix them well. Spinach With Daal Spinach is a green, leafy vegetable is known as a rich source of iron and calcium,a relatively high level of iron, compared to other vegetable and meat sources. Everyone knows that the cartoon character Popeye The Sailor Man-most kids favorite show consume spinach to gain physical strength but it's not that popular among kids especially mine....In order to make them eat spinach I cook it with moong daal or toor daal in a form of sambar but not exactly. Thakkali Kulambu This is one of my son's favorite curry for dosai. He will have at least 3 dosai with Thakkali Kulambu. A very simple curry to prepare. I used to prepare this very often when I first came to USA. After some time I got sick of preparing the same old curries again and again. Fluffy Home-Made Pancakes

Fluffy Home- Made Pancakes Serving Size:4 Ingredients 2 cups flour 2 tbsp sugar 1/2 tsp salt 1 tsp baking powder 1/2 tsp baking soda 1 cup buttermilk 3/4 cup milk 2 large eggs, separated 1/4 cup melted butter vegetable oil Preparation Methods: In a mixing bowl, combine the flour, sugar, salt, baking powder, and soda.In another bowl, whisk together buttermilk and milk, egg yolks, and melted butter. Blend into the dry ingredients just until all ingredients are moistened.Beat egg whites in another bowl until stiff peaks form. Fold into the batter until well incorporated. Heat a small amount of oil in a large skillet over medium heat. When skillet is hot enough , scoop pancake batter onto the skillet in about 1/4-cup portions, spreading slightly, When bubbles are popping and bottoms are nicely browned, about 2 to 3 minutes, turn over and cook the other side until browned, about 2 minutes longer.Serve hot with butter and maple syrup.

Bittergourd Fry

Bittergourd has excellent medicinal virtue and has the ability to reduce diabetes. Bittergourd being rich in all the essential vitamins and minerals esp vitamin A.B1,B2, C and iron. It happens to be another one of my favorite dish as well as my hubby.In Singapore the Malays uses carrots and eggs are add to reduce the bitterness of the vegetable and it also taste good. Today I'm prepare normal bittergourd fry which is my in law's recipe which she used to prepare in India for my hubby.
